This cut of beef is extremley popular on the West Coast but is quickly growing in populartiy in the Midwest now for smoking and roasting. It comes from the sirloin of the beef and is sometimes also called bottom sirloin. It is great to smoke or throw in the crock pot and cook it just like a chuck roast. These average 1.5-2.5 pounds each.
